Spaghetti squash – the perfect substitute for pasta!

How to roast a spaghetti squash:

Heat the oven to 375°F and arrange a rack in the middle. On a flat and steady surface, cut the squash in half lengthwise and scrape out the seeds. Brush the flesh with 2 tablespoons of the oil and season generously with sea salt and pepper. Place the squash halves cut-side up on a baking sheet and roast until you can puncture it with a fork, about 50 minutes. Remove the squash from the oven and let it sit at room temperature until cool enough to handle, about 20 minutes. Scrape the flesh with a fork to make long strands; set aside.

Spaghetti Squash “Pasta” Primavera

  • 1 spaghetti squash
  • 2 tbsp extra-virgin olive oil
  • 2 garlic cloves, crushed
  • 1/2 tsp red pepper flakes (more to taste)
  • 1/4 tsp ground garlic
  • Freshly ground pepper (to taste)
  • Himalayan sea salt (to taste)
  • 2 handfuls fresh organic spinach
  • 1/3 cup sun-dried tomatoes
  • 1/2 onion, chopped
  • Protein of choice (2 organic chicken breasts, 10 large shrimp)

Optional: Add in other vegetables (zucchini, broccoli, grape tomatoes, asparagus)

Instructions

Preheat oven to 375°F. Roast spaghetti squash. Prepare protein of choice. In a medium-size pot add oil, garlic, and onion and sauté for 3-5 minutes. Add in spaghetti squash and mix well. Add in sun-dried tomatoes, spinach, and any other vegetables of choice. Add in protein and mix well to combine. Add sea salt and freshly ground pepper to taste
